Vathal kuzhambu is one of the most distinctive gravies in Tamil cooking — a thick, tamarind-based gravy with a deep, sour complexity that no other dish quite replicates. Traditionally it takes time: tempering mustard and curry leaves in oil, reducing the tamarind, building the base layer by layer.
This ready mix is that base, already built. Heat oil in a kadai, sauté your onions and your choice of vathal or vegetable, stir in the mix with water, and boil for 7–8 minutes. That’s it. The tamarind, the spices, the roasted dal — all inside the pouch.
The vathal is yours to choose. Sundakkai (turkey berry), drumstick, brinjal, garlic — whatever your household uses. The mix doesn’t prescribe it. Hand-roasted in 5–7 kg small batches in T.Nagar, Chennai, and shipped within 10 days of roasting.
Shelf life: 7 months from date of manufacturing.
Storage Instructions: Refrigerate before and after opening for maximum freshness. Store in an airtight container. Use only a dry spoon.

Step 1 — Sauté:
Heat 3 tablespoons of oil in a kadai. Add 10 small onions (shallots) or garlic, or your choice of vathal, or all of the above. Add your choice of vegetable. Sauté for a few minutes.
Step 2 — Combine & Boil:
Stir in 1.5 tablespoons (25g) of Vathal Kuzhambu Ready Mix and 1–1.5 cups (200–300 ml) of water. Boil for 7–8 minutes until thickened to your liking.
Serving suggestion:
Best with hot rice. Also works with curd rice, idli, and dosa.

1. What is vathal kuzhambu?
A thick, tangy tamarind-based gravy — one of the most loved dishes in Tamil cooking. Deep, sour, and spiced. Eaten over hot rice, or as a side with idli and dosa. Different from sambar — thicker, more intense, and built on tamarind rather than dal.
2. What vathal or vegetable should I add?
The classic is sundakkai (sun-dried turkey berry). Drumstick, brinjal, and garlic are equally common. Manathakkali vathal works well too. The mix doesn’t prescribe — use whatever your household prefers or whatever is available.
3. Does the pouch contain vathal?
No — the pouch is the spice base only. The vathal or vegetable is something you add fresh during cooking. This keeps the dish personal and lets you use what you prefer.
4. How long does it take to cook?
About 10 minutes from start to finish. Sauté your onions and vathal for a few minutes, stir in the mix with water, boil for 7–8 minutes. Done.
5. What’s in it — and what’s NOT?
Toor Dal, Bengal Gram, Coriander Seeds, Pepper, Fenugreek, Rice, Red Chillies, Tamarind, Asafoetida, Turmeric, Mustard Seeds, Curry Leaves & Salt. No preservatives, no anti-caking agents, no MSG, no palm oil, no artificial colours, no flavour enhancers. Nothing we wouldn’t put in our own food.
6. How spicy is it?
Mild. The red chillies and pepper give it warmth, but it’s not sharp or aggressive. You can adjust the heat by adding fresh chillies when you sauté the onions if you want more.
7. How much does one pack make?
One pack (100g) contains 4 servings of 25g each. One serving (1.5 tablespoons) with 200–300 ml of water makes a full pot of kuzhambu for 2–3 people.
8. What’s the shelf life?

9. How do I store it after opening?
