The sambar you’ve been trying to make.

Wedding sambar — the thick, rich, deeply spiced sambar served at Tamil weddings and feasts — is a different thing from everyday sambar. The difference is in how the masala is made. Wedding sambar uses arachuvitta or blended masala: spices and coconut stone-ground fresh, not pre-mixed powder added from a packet. That process is what gives it the depth, the body, and the aroma that everyday sambar doesn’t have.

This ready mix is that arachuvitta masala, already stone-ground and balanced. Toor dal, desiccated coconut, tamarind, and the full spice set — all inside the pouch. You add oil, your onions, your vegetables, and water. Two steps, 10 minutes. That’s your only job.

The tamarind is already in. The dal is already in. The coconut is already in. Nothing to source separately. Hand-roasted in 5–7 kg small batches in T.Nagar, Chennai, and shipped within 10 days of roasting.

Shelf life: 7 months from date of manufacture.

Step 1 — Sauté:

In a kadai, heat 2 tablespoons of oil. Add 10 small onions (shallots) or 1 big onion and any vegetable of your choice. Sauté for a few minutes, then add 1.5 tablespoons (25g) of Wedding Sambar Ready Mix and 1 cup (200 ml) of water.

Step 2 — Cook:

Allow it to boil for 7–8 minutes until it thickens to your desired consistency, or pressure cook for 2 whistles on medium flame.

Serving suggestion:

Best with hot rice. Also works with idli and dosa.

1. What makes this different from regular sambar powder?

Most sambar powders are pre-ground commercial masalas — you’re adding flavouring to a dal base. This is an arachuvitta sambar mix — stone-ground masala with desiccated coconut, tamarind, and the full spice set already balanced inside. The coconut and tamarind are what give wedding sambar its body and depth. Most ready mixes don’t include either. This one does. Also need not cook dal separately.

2. Do I need to add tamarind separately?

No. The tamarind is already inside the mix, measured and balanced. You add oil, onions, your choice of vegetable, and water. Nothing else needed.

3. Why is it called wedding sambar?

In Tamil Nadu, the sambar served at weddings and feasts is a different thing from everyday sambar — thicker, richer, more deeply spiced, made with freshly ground masala and coconut. It’s the sambar people specifically remember and try to recreate at home. That’s what this mix is built around.

4. How long does it take to cook?

10 minutes. Sauté your onions and vegetables, add the mix with water, and boil for 7–8 minutes. Or pressure cook for 2 whistles on medium flame if you prefer a quicker route.

5. What vegetables work best?

Drumstick is the classic. Brinjal, shallots, tomato, carrot, and beans all work well. Use whatever your household prefers — the mix is built to work with the full range of sambar vegetables.

6. What’s in it — and what’s NOT?

7. How spicy is it?

Medium. Built for everyday eating — the kind of spice level that works for the whole family, including children. Not aggressive. You can increase the heat by adding fresh green chillies when you sauté the onions if you want more.

8. How much does one pack make?

One pack (100g) contains 4 servings of 25g each. One serving with 200 ml of water makes a full pot of sambar for 2–3 people.
